How do I use it?
Use maltitol to replace part or all of the sugar in the recipe: use one measure maltitol for one measure sugar.
Notes
- Maltitol is more and more used in industrial and small food processors’ recipes.
- It shows less browning at similar temperatures to sugar. It can be used to make transparent caramel or coloured glass (colour with food coloring).
- Maltitol is a sugar alcohol and less a source of food carries.
- It has a low glycemic index and has been used successfully in food for diabetics.
