The multi-pipette « Multiperles » is a laboratory tool that allows the simultaneous production of thousands of small pearls -about the size of fish roe- like the ones obtained using a disposable pipette (end trimmed for a larger diametre). It delivers in just seconds hundreds of mouth bursting liquid filled pearls that can immediately be added to your dishes and menu !

Ideal for large quantities of one kind of pearl e.g. last minute preparation at a big cocktail or for use in ice cream and preserves... Also useful for decorating gels, sauces, soups...

Cleaning

The Multi-pipette is made of polycarbonate plastic and resists autoclaving ! You can sterilise it easily in a warm oven or pressure cooker if required.

Wash the multi-pipette immediately after use avoiding any dry deposits on the wells and box walls. We recommend using a food grade desinfectant or a baby bottle rinsing wash. Fill a seringe with adequate solution. Rinse using hot water several times. Rinse one last time using a clean seringe and pure water.

Producing pearls by spherification

Follow spherification instructions to prepare spherification alginate based drip ( 0,75 to 1% alginate powder, low calcium, soft water solutions...)

Draw the liquid into the multi-pipette without overflowing into the main chamber. Use the « lid » to prepare enough liquid for spherification. Use the syringe to inject the solution into the multi-pipette's hundred cells then eject the liquid above the seting bath or the target (almost set gel, sauce, soup...). Allow to rest a few minutes in the setting bath. Pearls will not stick together but may release some colouring. After 30 minutes, they will be fully set inside so they must be removed and served before 30 minutes using a sieve, strainer or slotted spoon. Drop into a cocktail, lay over ice cream, add to a verrine. After approximately 30 minutes, pearls can be used like raisins of small chunks of fruit : in a salad, with/in jelly, in a custard or chocolate sauce (even hot)... pearls resist heat above 100°C and can therefore be used like sultanas in a fruit cake or muffin !
