Applewood and cherrywood yield a light sweet scented smoke often used for ham, poultry and game whereas Mesquite (typical of Mexico and South Western States) and Hickory (close relative to the hazel tree) yield a distinctive stronger smoke commonly used to flavour beef, game or pork – e.g. pork shoulder or beef brisket.

Cherrywood : delicious with most meat joints, recommended for game and steaks.
Applewood ; use for ham, game and poultry.
