Ingredients for 6 mugs / cups

  • 300 ml de whole milk
  • 30 g castor sugar
  • 1 sachet (2g) of carrageenan
  • 1 vanilla pod
  • hot coffee or cocao

Recette

  1. Add the sugar to 200 ml warm milk and stir in while heating. Add vanilla pod (split) and infuse 15 min. At boiling point, remove pod, add kappa and blend well.

  2. Allow the solution to set. Hold 1 hour in refrigerator.

  3. Blitz the milk gel into a smooth puree with remaining 100 ml milk and pour into whip. Inject 1 gas bulb and expel the snowy blanket ontop of coffee or hot cocoa. Take your time, the mousse won't melt...

Vary flavours using orange blossom flavoured sugar or essential almond or rose oils in place of vanilla pod.

Use powdered spices such as cinnamon, tonka bean, star-aniseed or a few drops of sherry or liquor (add before removing from fire or just before filling whip).
